These beans are small, kidney-shaped maroon-and-white beans historically cultivated by Anasazi cliff dwellers. They have a distinctive maroon and white appearance and a sweet, meaty, nutty flavour profile. Well suited for a variety of culinary uses, they cook evenly and hold texture, making them excellent for soups, stews, and side dishes. Additionally, Anasazi beans store well, making them valuable for food storage. Yield of this variety was significantly improved through selection efforts at UC Davis, increasing their agricultural reliability today.
