UC Tiger's Eye yields large flat 1/2-inch beans, mustard yellow or amber with dark red maroon swirls resembling tiger's eye. Creamy, potato-like with thin skins that nearly dissolve when cooked; used as dry beans in soups, for refried beans or pinto substitutes. UC Tiger's Eye, developed through UC Davis by seleciton with organic farmers, has improved BMV resistance and higher yields than the traditional Pepa de Zappalo, is an heirloom bean from Chile, Argentina.
